How to cook Hiyajiru (Cold miso soup over rice)

Hiyajiru (Cold soup) is easy and good for you!

Hiyajiru is Miyazaki prefecture's local food. It is so easy to make and good for you, since it is basically Rice and Miso soup. Just combine the both and chill.

Here is how to cook!

1) Chill miso soup
2) Chill cooked rice
3) Combine the 1)and 2) and some cucumber slices and some diced tofu, Shiso leaves(Japanese basil)

How to cook Miso soup
1) Bring some water to boil. Add miso paste, to the thickness that you like. You can use any broth, traditionally fish broth, alternatively chiken broth, doesn't matter anykind... I use no broth at all and still good.

2) Put in a fridge. You can add ice cube when you want to have it right after you made miso soup.

How to prepare cucumber slices
1) slice cucumber with a slicer... put some sea salt, then squeeze the liquid.
2)Keep it in a fridge.

 Optional
1)sesame seeds grounded
2) Shirasu fish (small fishes as below)
3) Toasted Usuage (deepfried tofu)
4) other veges... spicy or something with lot of flavor, like Myouga, or Kaiware daikon, as much as you like

Homemade
I use homemade Miso so it is chemical free and it is very healthy. Japanese super market products are using a lot of food additives to keep it long-life, so I do not buy my miso from the supermarket. I don't trust vegetables neither so I grow on my own...  Still, Hiyajiru is relatively free from those food additives, and if you can find a good miso maker, it gives you a good macrobiotics to your stomach.
All you need is a good miso for this recipe!
